Summary:
Directly responsible for all kitchen functions including food purchasing, preparation and maintenance of quality standards; sanitation and cleanlinessESSENTIAL PROFESSIONAL FUNCTIONS:
oEnsure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards.
oCreate a positive, professional and safe working environment for all employees.
oFill in where needed to ensure guest service standards and efficient operations.
oPrepare all required paperwork, including forms and reports in an organized and timely manner.
oEnsure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
oWork with Senior Management to plan and price menu items.
Establish portion sizes and standards for all new menu items.
Ensure that food cost standards are met.
oWrites and costs weekly specialsoEnsure that all products are ordered according to predetermined product specifications and received in correct unit count and condition and deliveries are performed in accordance with the restaurant's receiving policies and procedures.
oControl food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures.
oResponsible for maintaining appropriate cleaning schedules for kitchen floors, walls, hoods, other equipment, including trash and dumpster areas and food storage areas.
oOversee the maintenance of proper food holding and refrigeration temperature control points.
oProvide safety training in first aid, CPR, lifting and carrying objects and handling hazardous materials.
oMaintain a professional and positive working relationship with all purveyors.
oComplete monthly inventoryRESULTS UPON WHICH PERFORMANCE IS EVALUATED:
oGuests are delighted with flavor and presentation of foodoMeals are delivered to guests in a timely manneroFood cost is at target of 31%oInventory is well managedoHealth department inspections reveal no critical violations, minor violations are corrected on the spotoQuality standards are met or exceededQUALIFICATION STANDARDS:
oA minimum of 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook, cold line and expediter.
oCulinary talent and expertiseoMust be able to communicate clearly with managers, kitchen and dining room personnel and guests.
oBe able to reach, bend, stoop and frequently lift up to 50 pounds.
oBe able to work in a standing position for long periods of time.
